Saturday mornings are the only time I can cook a proper breakfast. I can sleep in (within reason), enjoy a cup of coffee while viewing the morning sky, and actually think about what I WANT to eat. With a sweet potato, onions and peppers in my co-op basket this week, it was a no brainer to cook up this deliciously, spicy hash.
PS: Did you know sweet potatoes can be white?! Mind was blown when i was peeling mine 🙂
